Classic heirloom variety for cooking.
Tender and mild-tasting, with very long roots.
Try braising them like carrots, with a bit of soy and honey.
The flavor is rich and almost caramel-like.
BOTANICAL NAME: Arctium lappa
Hardy, vigorous, grows rapidly. Sow in the garden anytime in spring. Space 4" to 6" apart and plant seeds 1" deep or less. Well-composted and prepared soil gives the best crop. Or start the plants closer and eat the thinnings. This variety is bred for edible leaves, used in soup, stir-fry, etc. Harvest in the fall. Roots are used like carrots. Do not wash them until time of use, as washed roots wilt.
