Many gardeners prefer to
grow their onions from seed because they have a finer
flavor than onions grown from sets and often keep better.
Start seeds indoors in January or February in zone 8 and above. You can start many varieties in the fall for a spring/early summer harvest.
Onions should be harvested when the tops begin to dry up and fall over, then shade-cure for a week before storing.
Onions do not like clay or acid soils. Water regularly. In addition, some varieties needs summer days to bulb up. Bulbs can be consumed raw, cooked, dried, pickled, or roasted.
