Amaranthus tricolor Large medium-green tender tasty leaves. The oval leaves are overlaid with burgundy red for a coleus-like appearance. Delicious cooked, in our experience it tastes like spinach but without the oxalic acid or as much fiber. Not good raw. Whole plant must be harvested - picking leaf by leaf it gets bitter. Best to sow in succession. Heat tolerant. Multi-stalked, 18-20" tall. C 300 seeds. |

Chenopodium nuttalliae Huauzontle. A relative of quinoa and spinach--more or less midway between the two in size, shape and use. Sprouts quickly for use as red baby leaves for salad mix. Basella rubra Not actually spinach, but a good hot weather substitute. A very unusual productive and delicious Asian vegetable. Thick, dark-green leaves provide abundant tasty greens throughout the summer when spinach will no longer grow: heat tolerant and vigorous. The current variety has an attractive red stem. Vining habit - provide an adequate trellis for growth up to 6’. Delicious mild taste equally good in salads and cooking. Young stems good in salads. 50 seeds.
