BOTANICAL NAME: Triticum monococcum
DESCRIPTION: Formerly Einkorn hornemanii. Limited production from our research garden. This rare, high-protein wheat (18.3% in an Ecology Action test) has two artistically-bearded seed rows to each seed head, with many seed heads per plant (up to 90 with wider spacings). Originally a widely cultivated variety in Switzerland, Spain, and the eastern Caucasus. Reportedly cultivated 7,500 - 12,000 years ago. A venerable, quality food source. Difficult to thresh and clean. Much higher in carotene than modern wheats. Spring planted. Grows 2-3 ft tall.
One packet will plant 4 sq ft when using 5" spacing in the bed.
