Formerly Einkorn hornemanii. Limited production from our research garden. This rare, high-protein wheat (18.3% in an Ecology Action test) has two artistically-bearded seed rows to each seed head, with many seed heads per plant (up to 90 with wider spacings). Originally a widely cultivated variety in Switzerland, Spain, and the< eastern Caucasus. Reportedly cultivated 7,500 - 12,000 years ago. A venerable, quality food source. Difficult to thresh and clean. Much higher in carotene than modern wheats. Spring planted.
One packet will plant 2 sq ft when using 5" spacing in the bed.

PACKET LABEL INSTRUCTIONS: Start in flats about two weeks after last frost. Transplant 6-8" apart when 2-3 " high. Matures in 17-26 weeks. Can also be broadcast. Cease watering when 85% of seed heads are golden and harvest when almost all are golden. Dry fully before storing.
