British vegetable, very popular for its naturally sweet flavor. Reliable food during the winter months. Grow like Carrots, but parsnips are hardier - the roots will take 0 degrees in the ground and flavor improves with frost. Needs deep, well-prepared, loose soil. Seed takes a long time to germinate - mulch lightly or cover with a board and keep moist until seeds sprout. Roots are eaten raw, boiled, steamed, sautéed, mashed, pureed, baked. Use seed promptly--it doesn’t keep.
