SEED PACKET INSTRUCTIONS: Plant very shallow and keep moist. Very cold-tolerant; will survive mild frosts and can be grown all winter in mild winter areas in a greenhouse or cold frame. Will regrow after cutting, or plant in succession. Flower buds and seeds are also edible.
BOTANICAL NAME: Plantago coronopus
DESCRIPTION: Also known as erba stella, Staghorn, and buck's horn plantain. Crunchy, succulent leaves make a great addition to salads. Ultra-hardy. Minutina, like minerís lettuce, corn salad, and mizuna, stands all winter, even in Maine, in an unheated greenhouse. (See Four Season Harvest for more information). Small plant makes a rosette of slender leaves, cut and forked like a stagís horns. Easy to grow, takes very little space, regrows after cutting. Flower buds edible, too.
