Leeks are a delicious addition to soups or stews.
Leeks are extremely hardy and do not take up much space. They are are easily grown, and are resistant to disease of all kinds. Start leeks in early spring. Leeks germinate readily in any well dug soil, but need it well manured or composted. We prefer to start our leeks in flats and plant them out when they are 6-8 inches high and perhaps 3/8 inches thick. Likes a lot of N.
Leeks are eaten for both their small bulbs and for their sheath of flat leaves, often called a stem.
