This is actually a biennial thistle. Burdock grows to 6', and has a root up to 3 feet long. Prefers fresh, worked soil rich in humus. Should be planted in full sunlight. Burdock reacts poorly to nitrogen fertilizer. Propagation is achieved through direct sowing the seeds midsummer. Long tender roots grow quickly, and do best in deep soils.
An important vegetable and medicine in Japan and China. The roots are cooked like carrots, and have a sweet rich flavor. Very young roots are great peeled and used in salads. Older roots can be stir-fried, sauteed, roasted, pickled, dried, or used in soups or stews.
