An important vegetable and medicine in Japan and China. Roots cooked like carrots with sweet rich flavor. Very young roots can be peeled and used in salads. Older roots are stir-fried, sauteed, roasted, pickled, dried, or used in soups or stews.
Actually a biennial thistle, grows to 6' with a root up to 3 feet long. It prefers a fresh, worked soil, rich in humus, and should be positioned in full sunlight. Burdock is very reactive to nitrogen fertilizer. Propagation is achieved through direct sowing the seeds midsummer. Long tender roots grow quickly--best in deep soils.
