DESCRIPTION: A very important vegetable in Japan and China - regarded as both nutritious and curative. Long tender roots grow quickly. Biennial: a crop possible the first year, but larger crop in second. Does best in deep, sandy soils. Flowering stems edible, can be sprouted, tender young roots eaten like celery, older roots cooked like carrots. Stalks can also be steamed and eaten like asparagus.
