PACKET LABEL INSTRUCTIONS: Start seeds directly after all danger of frost is past, on 6" centers. Likes well-drained soil in good tilth and fairly level (so the small seeds do not wash away). Cover seeds thinly with soil (about 1/8"). To germinate keep soil moist - water moderately. After 3-5 weeks start harvesting leaves, but for continued production don't harvest more than half the plant at once.

BOTANICAL NAME: Amaranthus sp.
DESCRIPTION: Large to medium sized tender tasty leaves. The green oval leaves are overlaid with burgundy red for a coleus - like appearance. Delicious cooked; in our experience it tastes like spinach (high in minerals but also high in oxalic acid content). Not good raw. Whole plant must be harvested - picking leaf by leaf it gets bitter. Best to sow in succession. Heat tolerant. Multi-stalked, 18-20" tall.
Kim Powers, a long-time customer, tells us this is his favorite leaf amaranth. He loves amaranths and has grown numerous varieties for leaf (too cold there to hope for grain) and this is his absolute favorite. If you pick the leaves fairly young they are the butteriest, creamiest cooked leaves of all.
