After 3-5 weeks start harvesting leaves, but for continued production don't harvest more than half the plant at once.
For more information see our: Amaranth & Quinoa Information Sheet
BOTANICAL NAME: Amaranthus sp.
DESCRIPTION: Large to medium sized tender tasty leaves. The green oval leaves are overlaid with burgundy red for a coleus - like appearance. Delicious cooked; in our experience it tastes like spinach (high in minerals but also high in oxalic acid content). Not good raw. Whole plant must be harvested - picking leaf by leaf it gets bitter. Best to sow in succession. Heat tolerant. Multi-stalked, 18-20" tall.
