PACKET INSTRUCTIONS: Start in flats or in the garden after all danger of frost, on 6" centers in a level spot (so the small seeds do not wash away.) Dig in compost and rake well before planting. Cover seeds thinly with soil (about 1/8"). Keep soil moist until seeds sprout, do not let them wilt. Variety with red centers on green leaves (black seeds are in this mix) are used like spinach as soon as plant reaches 10". The rest, both green and red-leaved are for grain; cut and thresh tops when seed starts to shed.
The black seeds in this mix are Calaloo - a variety with red centers on green leaves - grown for the leafy greens and not grain (best harvested young before plant starts to flower). The rest or the packet contains both red and green-leaved Amaranth generally grown for grain.

Amaranth has no hull to remove--great beginner's grain for cereal, pilaf, and soups. High in protein. Start after frost date when soil is warm. When seeds first start to drop to the ground cut heads and hang in protected place with good ventilation over a tarp to catch seeds. When dry, rub heads to remove seeds and winnow. Loves heat.
The seeds will cross, but produce a variety of greens and seed types. A lovely display, of the Amaranths grown at our research gardens. A good way to find a type especially well suited to your garden, or to start your own variety.
