PACKET LABEL INSTRUCTIONS: Start seeds in flats or sow 1/8" deep and 12" apart directly into beds after all danger of frost has passed. Keep soil moist until seedlings are established, but after that water sparingly. Does best under dry, warm conditions. Harvest when seedheads mature and dry out. Can be threshed and winnowed by hand. This vartety is quite variable with seedheads varying from orange through purple and several shapes.

BOTANICAL NAME: Amaranthus spp.
Amaranth has no hull to remove--great beginner's grain for cereal, pilaf, and soups. High in protein. Start after frost date when soil is warm. When seeds first start to drop to the ground cut heads and hang in protected place with good ventilation over a tarp to catch seeds. When dry, rub heads to remove seeds and winnow. Loves heat.
A productive and beautiful amaranth from Golden Rule's Ellen Bartholomew, who has trialed so many unusual grains over the years. Ellen originally got the seeds from Salt Spring Island Seeds and believes they were a cross of Burgundy and Golden Giant Amaranth. This one is really fun - the seeds themselves are all white - but the flower heads can vary wildly in color - yellow, orange etc. and shape. 5-7' with leaves both red and green.
